Notes - 4 Charles is a nine table restaurant located in the basement of a red-brick Manhattan apartment building. A common top choice among pro athletes of NY teams, this apartment-turned restaurant might make your stomach turn when the check comes. Four of the nine tables were celebrating a special occasion, a psychological trick that helps justify paying $140 for 16oz of bovine flesh. We saw Kevin Love, the NBA champ, celebrate his anniversary just a few feet away. Most importantly, the chefs' performance was a home run, a slam dunk, an ace! The 4 Charles Cut we ordered was evenly tender throughout despite its near three inch thickness, the side of mushrooms was special, and the bone marrow set it all up beautifully. They were three dishes I could never replicate.
